Why Sheep’s Milk?

Sheep’s milk is richer, creamier, and slightly sweeter than cow’s milk—making it perfect for soft cheeses like ricotta.

Ingredients

  • 1 gallon fresh sheep’s milk
  • 1/3 cup white vinegar or lemon juice
  • 1 teaspoon salt
  • Optional: fresh herbs (thyme, basil), garlic, or honey

Instructions

  1. Heat the Milk
Pour the sheep’s milk into a large pot and slowly heat to 185°F (just before boiling). Stir occasionally so it doesn’t scorch.
  2. Add Acid
Remove from heat and gently stir in the vinegar or lemon juice. Let it sit for 10 minutes—you’ll see curds form.
  3. Strain the Curds
Line a colander with cheesecloth and pour the mixture in. Let it drain for 15–30 minutes depending on how thick you want it.
  4. Season
Add salt and any optional herbs, garlic, or even a drizzle of honey for a sweet version.

How to Serve

  • Spread on toasted bread with tomatoes
  • Add to pasta dishes or lasagna
  • Pair with honey and fresh fruit for a dessert
  • Use at the market for tastings—people LOVE this

Homestead Tip

Fresh sheep’s milk ricotta has a naturally creamy, almost buttery flavor—you don’t need much to make it shine. Keep it simple and let the milk do the work.
